I'm going to the beach with the ILs next week and need to plan a full day's menu. Breakfast, lunch, dinner. 10 adults, 5 kids. Two gluten-free people, one allergic to tree nuts. Someone else already claimed tacos with corn tortillas and all the fixings, so there goes my usual gluten-free idea. Oh, also, I prefer to make as much as I can ahead of time and bring it in a cooler to reheat, if possible. The stove at the rental house is really crappy, but there is a grill.
So this is what I have so far: Breakfast: Yogurts, cut up fruit, cereal. Breads for the non-GF people. Lunch: ??? Dinner: ??? Thanks for your ideas! |

Lunches:
Cold soups (cucumber, gazpacho, carrot-ginger) homemade or purchased served with salad, assorted cheese/fruit and gluten free crackers/baguette Tuna/chicken/egg salad with gluten free crackers or rice cakes/bread, fruit salad Main dish salad ~mixed greens with grilled chicken, avocado, roasted corn, red onion creamy buttermilk dressing ~baby spinach with grilled chicken, dried cranberries, almonds, goat cheese, vinaigrette Mediteranian platter purchased falafel, hummous, tatziki and hummous, pita for the gluten eaters Dinner Grilled protein (steak, chicken, fish) with a dry rub, marinade or salsa served with it (5 spice rubbed salmon with mango salsa, steak or leg of lamb marinated in olive oil, red wine, herbs, garlic and brown sugar) with salad and baked potatoes |
