High protein, nut free baked goods

Anonymous
I want to bake something with some more protein that is suitable to take to school and other nut free places. Any great ideas? I did find some banana bread recipes that include whey protein powder, but are they regulated and safe for regular consumption by kids?

Make a morning glory muffin. They typically use whole wheat flour, wheat germ, and sunflower seeds

I use Kodiak flour at home to make baked goods for everyone including the kids. It has whey protein added so it should be safe for you to do so. I didn’t recommend Kodiak because it says it has traces of egg, soy and nuts.

Replace some of the sugar in a recipe with blended cottage cheese and add an extra egg

If it’s high in fiber it will be just as filling as high protein fyi. Look into using whole grains.

Look for recipes with ricotta

Wanting protein since we don’t eat a whole lot of meat and I have an active boy. I do cook meat but having some protein in a snack form would be good. Nut butter baked goods are my go to, but not allowed at school and other places.
