Soup finished - but potatoes and carrots are still hard

Mi guess I’m asking is reheating for a long time enough? Will it overcook the rest of the soup (seafood, if it matters). I was afraid the seafood used would become tough.

If you are worried, pull the carrots and potatoes out. Throw them in some stock and cook until tender.

Next time start with the vegetables so they have more time to soften.

I’ve never had an issue - use my instapot. For some reason it didn’t work this time, though.

Then pull those out

Yeah, pull the seafood all out and let it sit in a little broth so it doesn’t dry out. Cook the rest of the pot so the vegetables cool.

This works, or if the pieces are big enough and you discover after, you could fish the carrots and potatoes out, nuke them, and put them back in.
