I bought a package of their rotisserie chicken meat the other day and realize I need to use it or freeze it. Other than the following, what would you make with it? Thanks!

I don’t know about Costco chicken specifically, but assuming it’s like any other rotisserie chicken I’d think you could:
Make sandwiches Top a green salad with it Shred and mix with barbecue sauce Serve with pasta and alfredo or pesto sauce make a chicken and rice casserole Mix with a Knorr rice/pasta and sauce packet and vegetables of your choice (ex. cheddar broccoli packet with frozen broccoli, chicken packet with mushrooms) |
| I'd do chicken and zucchini enchiladas. Shred some zucchini and squeeze the water out, then sautee with onion and garlic. Add the chicken and some seasonings. Then, roll into tortillas with a handful of cheese. Top with enchilada sauce! |

| I always buy it when I sign up to bring soup to a volunteer event. It’s great in soups that call for cooked chicken. The Greek lemon and spinach one is my favorite to make. |

| I use the extra meat for chicken enchiladas. I shred it and put it in a plastic baggie. I freeze it if I am not using it promptly. The chicken unfreezes very well. |

2-3 cup fat-free chicken broth (depending on how thick you want your soup) 2 cup diced potatoes 1 cup diced carrots 1 cup diced celery 1/2 cup diced onion 1 1/2 tsp salt 1/4 tsp pepper 1/4 cup margarine -- (1/2 stick) 1/4 cup flour 2 cup milk 8 ounces cheddar cheese -- shredded 2 cup cooked chicken -- diced, can use ham or turkey In 4-qt. saucepan, bring chicken broth to a boil. Reduce heat and add potatoes, carrots, celery, onion, salt and pepper; simmer, covered, 10 minutes. Meanwhile, in a medium saucepan, melt butter; add flour and mix well. Gradually stir in milk; cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add cheese mixture and chicken to vegetable mixture. Cook, stirring, over low heat until all ingredients are heated through. |
