Leftover black beans

Looking for inspiration on how to use up black beans cooked fairly simple in instant pot yesterday, ideally WITHOUT cheese. Spices were salt, cumin, oregano plus onion and garlic, but not overpowering.

And yesterday they were served with rice, guac, chips, cheese, salsa but a friend brought over lots of pizza so not as much was eaten as anticipated. Want to avoid dairy because everyone ate a lot yesterday.

Mix with onion, oats or breadcrumbs, and egg and pan fry or bake into veggie patties or "meat"balls

Use as a taco or burrito filling

Serve over baked sweet potatoes

Any specific recipes? Particularly on the healthy side? Feeling weighed down by chip and cheese overload.

I wonder if black beans would work well in a minestrone type soup.

You could do a Chipotle bowl type of deal? Everyone can make their own, and there isn't a whole lot of cooking involved.

+1 on taco or burrito filling, just don't add any cheese or sour cream if you want to avoid dairy.
I'd just eat the beans like they are! Yummy.

Chili would be my go-to.

Or mix them with rice for a side dish or even lunch- I’d happily eat forlunch all week!

You could also mix with ground beef and roll up into tortillas and “pan fry” them (like grddling so they brown a bit and press together).

Or eat over scrambled eggs for breakfasts.

I'd go with easy lunches for the week. Black beans and rice topped with avocado alices. Black beans and roasted sweet potatoes wrapped in a tortilla. Black beans, sauteed peppers and onions, and pico de gallo over romaine lettuce.

Make refried beans. Basically purée them you can use them as a dip. You can use them for burritos.

Serve over a lime cilantro rice.
Give people the option of a little cheese or guac

You can throw it into a tortilla and bake it and top with salsa, guac.

You can smash it with a potato masher and do open face tortillas - spread the black beans add some green onions and mushrooms and bake
