I’m unexpectedly ill so could not prepare foods ahead and don’t want to order every meal out.
What are some relatively easy foods I can make ahead over the weekend? I can’t stand for long but I could sit at a table and chop vegetables and throw things in a pan to cook. I was thinking: Roasted veggies Chili Fried rice I could also make salads but I’d prefer more filling foods. |

Roast chicken or pot roast with vegetables, slow cooked in the oven. Buy extra veggies and noodles and turn left overs into soup.

Eggs for omelets or scrambles. Frozen mixed vegetables. Bean thread or rice noodles. Some type of seasoned protein— like ground turkey or chicken, or even salmon. This way, you already have the ingredients for multiple meals — from stir fries to soup. Just mix and match as you wish.

| Do you have a slow cooker? Chicken breasts with either a jar of salsa or any other sauce starter. You can also do that in the oven with cheese tossed on top. Have tortillas and bagged lettuce. Pot roast - don’t worry about browning ahead of time. |
