Favorite meal train dinners

I'm assuming someone else will make lasagna...any ideas for meal train dinners? The mom says her kids especially like chicken or beef.

Maybe I should just do one tray of beef enchiladas, one tray of chicken enchiladas?

Chicken Parmesan.
Baked ziti.
White chicken chili.
Enchiladas sound good too.

Enchiladas sounds good to me
I make chicken parm when I sign up. Once I used a Hello Fresh kit that was chicken and mushroom risotto, and I thought that was very good. A friend got meal train to her house and said the tray of fajitas from Uncle Julios was the big hit.

Enchiladas sounds great.

A roast chicken with potatoes and vegetables could be nice, maybe with a salad.

Or pot roast

Or something like stew that's easy to heat up.

My go-to is a roast chicken + sweet potato fries + salad. Works for picky eaters and easy leftovers.

Something packaged so you can throw it in the freezer. My kids are big eaters. We had family over all the time and we still had more than we could eat.

Yep to all of these.

I’ve also done a shepherd’s pie (even though I’m not a fan, the recipient was).

Also add in some seasonal fruit. And a dessert. Hard to go wrong with homemade chocolate chip cookies.

Meatballs! They can serve on their own if they choose with bread and a salad, or over pasta or with rice.

Honestly anything other than the staples of lasagna, baked ziti, chili.

Smitten Kitchen chicken noodle soup with the noodles in a separate container. Easily freeze and its bone broth goodness just makes everyone feel better.

Similar to this, I didn't have time to cook or bake so I bought a few different soups from Safeway (not canned but the ones at the soup bar) and paired it with cornbread and breadsticks.

Roast chicken, whatever roast veggie, and either mashed potatoes or rice. I often will do this with the spatchcocked pre-marinated chicken from Trader Joe's because it's insanely easy.
