My goal in 2024 is to make more vegan dinners. Although already the veganism has spread and I am eating vegan meals a lot more than I was in 2023, thus far. Here are the recipes my family is tried so far and our ratings on a 1-5 scale:

If you try this vegan cheese in your Mac N Cheese recipe, you will never want to go back to dairy. My family who is not vegan loves this vegan cheese and refuses to eat regular cheddar.

We use this recipe all the time with lots of things beyond cauliflower, although I love the caulitflower. THe sauce is great on airfried tofu. I take the heat down a little for my kids but not by much. The last time I did it with tofu I served it over rice noodles and tossed in matchstick carrots and edamame.

This is my go-to pot pie recipe. It's so good! Sometimes I use a pie crust for the top, and other times I use puff pastry.
