Help with Brunch Menu

Having a brunch on Friday. 8 adults. This is what I am planning, but I feel like I need one more dish:

Fruit Salad

Baked French toast (https://smittenkitchen.com/2006/12/new-years-day-2001/)

Breakfast Casserole of some variety, still looking for a recipe

Do I need anything else? It’s not a fancy brunch. If you think I need something else, it has to be easy…I have 3 kids, including a 3 year old and 2 year old!

I don’t think you need baked French toast AND a casserole. Instead have the big pile of bacon like PP suggests. Make it in the oven, easy and less splatter/mess.

Nobody likes breakfast casseroles. They always sound great, but they are not good IRL. A frittata is a much better savory option. They can be made the day before (and are very tasty this way, after flavors come together).

A good strata is a fine breakfast casserole. I would ditch the French toast and have pastries or muffins

Personally, I would keep the fruit salad and make a tater tot casserole. Add in a pile of bacon and have a selection of bagels w/ a few cream cheese options.

In every group there is usually someone that would greatly appreciate a simple option like a bagel.

+1 Make the bacon in the microwave on a plate between paper towels to minimize cleanup. Add croissants/pastries and a quick yogurt +granola parfait to go with the fruit.

If I was doing fruit and French toast and one other thing, I’d make the one other thing protein, not protein and carbs mixed. I say this as someone who loves carbs and would eat a ton of French toast and then want something to balance that.

So, either bacon or frittata (or both).

In my ideal world there would also be veggies, whether in the eggs or as a side. But I recognize that might just be me.

Definitely bacon

I'd buy a quiche from Wegman's or Whole Foods and just heat in oven instead of casserole.

It would also be nice to have good quality bread with butter and jam. Or bagels and cream cheese.

I'd do a couple quiches instead of the breakfast casserole.

I'd also add bagels and cream cheese and maybe lox; or deviled eggs. All are easily made or obtained ahead of time.

Bagels would be the easiest addition.

I think the breakfast casserole is a good counterpoint to the french toast casserole, but maybe make one that's a little lighter/healthier. Spinach and artichoke, or asparagus and smoked salmon.

Bagels for a group are annoying. You either have them insufficiently toasted, or they are toasted but get cold, or everyone has to go in a single file line.

+1. And if you buy pre-made pie crust dough, quiche is pretty much as easy as a breakfast casserole.
