Cookie presses?

I’m an avid baker but new to the idea of the cookie press. I made spritz cookies for the first time and loved how fast I could pump them out. But wow are they teeny! I have a few recipes for Italian bakery cookies that mention using a cookie press to shape the dough as an alternative to a piping bag and star tip. I’m confused. How can a cookie press make large cookies? Do they come in difference sizes? Is there a trick?

What brand are you using? I think both the Wilton and OXO brands produce cookies that are...well...small.

I don't make them often but when I do, I use my mother's/vintage Mirro press.

It isn't highly rated, though, if that matters to you. The barrel has a wider diameter and I think the screw-press mechanism gives me far more control over how much dough is extruded, especially compared to the "clicker" style of the more modern ones. It does require some practice to get consistently sized cookies but, to me, that's the beauty of a homemade batch. They are not all the same. Love, love the Christmas tree disc!

The old ones have plates for a strip or ribbon shape so you can pipe out a long cookie. Also the consistency of dough matters for size

I make spritz every year and have never seen a cookie press that makes larger cookies. Used to use a Mirro like my mom had but a few years ago switched to Oxo and love it. It's so much faster and more reliable.

One thing you can do to make the spritz cookies more substantial is to turn them into sandwich cookies.

Thanks all! I have one that was purchased at Crate & Barrel ages ago. It’s stored in a tin but doesn’t have a manufacturer label so I’m not sure who actually makes it. It’s interesting that there are some old ones that make ribbons. I’d love to find one of those.
