Light dinner ideas ahead of holiday eating?

I’m meal planning for the week and trying to come up with ideas for light meals for M-Sat, ahead of all the junk we will surely eat on Sun-M. I’d love some ideas of meals meals that are light but still tasty and include protein. Thanks!

*NO SEAFOOD, we have an allergy in our household

Can cheat the prep by buying pre made coleslaw veggies. in a bag.

Soup is a meal. There I said it.
I also just eat a cup of soup with no bread. Others can have more soup with more bread.
