sauce for ham? (not maple/honey/brown sugar)

I’m going to be making a slow-cooked cured bone-in whole ham for Christmas (amazing results btw - everyone should try it). Looking for sauce ideas! I’m thinking savory/acid, so not honey or maple syrup based. Any ideas appreciated.

I like a honey mustard sauce, but if you dont want honey you could probably find a nice bright mustardy based sauce.

If it has a lot of mustard flavor, maybe I should be more open minded! The way I do the ham uses some sugar but not a ton. Looking for balance, not something cloyingly sweet.

Then just do a variety of mustards. the OG for ham.

Horseradish is also excellent with ham. Look up horsey sauce type recipes

I’m a big mustard-head but I thought my guests might not enjoy straight Maille the way I do!
