Agree with this!!!! And I have a few chicken dishes I just really love the sauces to (a thyme and mushroom one, butter chicken) so trying to find some good substitutes that work the same. |

Agree. I rarely do chicken these days. Huge, thick and tough. Gross. I buy from a special chicken purveyor but I’m out of the area, otherwise I would share the name.

I now buy mine pounded into nice thin filets from the farmers market or chicken purveyor. I hate hate pounding chicken |
| Pound them in a ziploc bag. Yeah you "waste" a bag but better than chicken juice everywhere. |
