Baltimore restaurants

My family is going to Baltimore for the long weekend. We like to try new restaurants and different types of food. We like Ethiopian, Thai, Vietnamese, Indian, etc. American is good, too.

What restaurants would you recommend? Especially ones in the inner harbor.

There is no where you want to eat at the inner harbor. It's all chains. The Helmand on north Charles is excellent.
