easy weeknight meal ideas for dh and me?

Between the two of us and our pickiness/allergies, we don't eat: seafood, pork (bacon yes, pork loin etc no - don't ask), lamb, mayo.

Can you give me some ideas? These are the meals in our rotation most of the time:

-Penne Vodka
-Cajun Chicken Pasta
-Angel Hair with Meat Sauce
-French Fried Onion chicken
-Chicken Paillard w/Roasted Corn + Tomatoes
-Chicken Enchiladas
-Beef Empanadas

and for sides I usually make scalloped/mashed potatoes and broccoli and/or asparagus.

Clearly I need some more ideas.. thanks!

My weekday meals almost always center around these ideas:

- quesadillas with different fillings: a can of pinto beans warmed up and seasoned with cumin and chilli poweder, cheese, peppers and onions, or spinach, mushroom and cheese
- homemade pizza - I buy the fresh dough from Trader Joe's usually, the whole thing takes less than 20 mins from start to finish
- veggie burgers with oven baked french fries, or sauteed vegetables - we like the Morningstar Farms black bean burgers, but I am planning on experimenting with some home made recipes soon
- omelettes - my favorite filling is sauteed fresh baby spinach, mushrooms, and feta
- at least one night is a pasta dish - once every couple of months I make a huge batch of pasta sauce from crushed tomatoes, garlic, onions and basil, and freeze in individual bags. My personal favorite pasta is just with olive oil, parmesan and pine nuts, but my husband likes sauce. I also almost always have a container or two of fresh cheese ravioli or tortellini from Costco.
- On a weeekend I will make a huge pot of rice - my current favorite is yellow rice, which I make by mixing plain cooked rice with a bag of sauteed mixed frozen veggies, garlic, and turmeric. Separately I will cook chicken breast, however you prefer - I sautee seasoned bite size pieces in a little olive oil. Those two things are good for at least two dinners during the week, and you can also use the chicken in other dishes. I actually don't eat meat, so I will make myself a veggie burger to go with the rice.
- Fish fillets - a new favorite is oven baked tilapia with a parmesan and panko bread crumb crust - it takes less than 30 mins to the table.
- Tuna salad - my husband makes a great tuna salad that we eat on baguettes with lettuce. Then I take it again for lunch the next day.
