Do you have a good pot roast recipe to share?

My favorite way to make Chuck roast is to add water (maybe 1-2 cups), soy sauce (about 1/3-1/2 cup) and ginger cut in coins, about 5 of them. Crush some garlic. Simmer for about 3 hours, turning every once in a while. Towards the end add carrots and potatoes, either baby ones or sliced. Or skip potatoes and serve with rice. It’s a very forgiving recipe, no need for exact measurements.

I just use regular chuck. I sub a sweet onion if I don’t have shallots, and sometimes potatoes for the parsnip and celery root.

The nom nom paleo Yankee pot roast recipe is really god, but she only has the instant pot version on the website. It’s in her first cookbook.
