I freeze a lot of pasta based meals - lasagna, stuffed shells, chicken spinach pasta casserole. I freeze all of them in individual portions. I also freeze muffins - which defrost in the microwave in 30 seconds. Soups are also easy to freeze.

Casserole dish with rice, chicken, and chopped broccoli, cooked with chicken broth, salt and an herb mix. Cheese optional. You can also add in other vegetables like spinach if desired.

Chicken enchiladas.
