| We do a lot of roasted veggies - particularly broccoli and green beans. Buy in steam bags. Steam in bag in microwave. Empty bag into toaster oven baking tray, spray with Pam, sprinkle salt, pepper and garlic powder and bake at 400 for about 10 minutes. Tastes really good and doesn't get much easier than that. |

| Cut up veggies of choice into heated pan, season (I usually use salt, pepper, basi and crushed red pepper), add in a bit of Rao's. When it bubbles, add two eggs, more spices, a sprinkle of cheese and then cover until eggs are to your liking--I like broken yolks. You can also do this baked. It is a great way to get veggies and protien. |

| I always have Thai green and red curry paste handy, along with canned coconut milk. It’s easy to whip up a curry with vegetables like broccoli, carrots, peppers, squash, eggplant, baby corn, mushrooms, Thai basil and thrown in some chicken or tofu. |

Gardener's pie instead of Shepherd's pie
Use lentils, vegetables, tomato, nuts etc as a base topped with mashed potato. |

Stuffed peppers. I put spinach, Spanish rice, corn, cheese, dill in it.
I roast the peppers ahead of time and have my filling ready. Time is money. |
"chickpea salad" = Hummus. Not that there's anything wrong with that but it may help others to think ohhh hummus - I can do lots with that. |
