Kuku paka: an East African Indian-inspired dish of chicken in coconut curry sauce. Our housekeeper used to make an amazing version when we lived in Kenya.

Love all her recipes.
Also Thiéboudiène, Cassa leaf stew, Waakye, Egusi soup. They require more specialty ingredients though. You can make chicken stew and use some of the stew to make jollof rice. Some fried plantains to go with it
