Not to hijack, but I've become addicted to this eggplant thing I've been getting from the Turkish food guy at our farmer's market every Saturday morning.
It's like a chunky spread that you serve with bread or pita chips: roasted eggplant, tomatoes, olive oil, and I think just some seasonings, but it is SO tasty. I have no idea how to make it but I'd love to once the eggplants in our garden are ready. Does anyone know what it is called and/or how to make it? |
Is it baba ganoush? OP, I like to grill eggplant with a few other veggies and use it in tacos or pasta. It's surprisingly good grilled. I use my Cuisinart Griddler if I don't want to go outside (which is often these days). Just salt it, let it sit awhile, and blot it before grilling. |

| I was going to suggest baba ghanoush. It freezes well and is fairly easy to make with a food processor. |

| yes, happy you asked, try Bigannie- "bye-gan-E" you cut the eddplant into circular peices(half inch thick) with skin, get a bowl with 1 cup flour and 1 TSP of adobo all purpose seasoning, mix that up-set aside, get frying pan and add olive oil about one inch high- m,ed heat, beat an egg in bowl seperately, place each eggplant into beaten egg, both sides- then flour it, both sides then fry it on both sides until its golden brown (approx 3 mins) DELICIOUS!! hope this helps. |
Hmm, I don't think so. I've had baba ganoush before and this is slightly different and has pieces of tomato in it. Maybe it's a Turkish version of baba ganoush, though?? In any case, I don't know how to make it but I bet I can find a recipe now if I search for variations on baba ganoush, so thanks! |
