Chicken cacciatore in the slow cooker over pasta

Sweet potato and chickpea Buddha bowl with peanut sauce

Shredded chicken tacos again using the slow cooker for the chicken

Made char sui today and will make fried rice with it Tuesday

I have a lb of ground pork and cabbage to use up by Wed. I don’t want Asian 2 nights in a row so need to figure that out.

Sunday - eggplant parm
Monday - broccoli tofu stir fry with sesame sauce, brown rice
Tuesday - zucchini tomato pasta with white beans
Wednesday - roasted cod with cherry tomatoes and farro
Thursday - red lentil dal and baingan bharta (stewed eggplant and tomato)

Today: mapo tofu type dish with leftover meat and green beans, rice
Monday: green chili with chicken and peppers, rice and/or quesadillas for picky kids
Tuesday: leftovers (Afghan red beans and rice, yogurt sauce, cucumbers)
Wednesday: chickpea pasta with tomato sauce, either zucchini or Caesar salad

We don't usually plan out a full week because we wind up with stuff to use up, and Friday is chicken nugget night as a treat for the kids. (Adults eat something else but we usually have options in the fridge or freezer.)

I’m buying a rotisserie chicken from Costco today. Still not sure what dinner will be though.
Probably chicken, rice, broccoli and carrots.
Tomorrow we’re having pesto salmon with potatoes and broccoli.
