Recommend your “go to” (no meat) meals for an inexperienced cook

I’ve decided to start cooking a few meals a week. I’m looking for suggestions for meals teenagers might enjoy, that don’t involve meat, and that a person with a brain but little kitchen experience can successfully prepare. TIA!

Baked ziti, baby! The hardest part is getting the proportions of the sauce correct, but you'll figure out what you like. Add salad and garlic bread, and it's a hearty meal sure to please all.

This is one of my all time favorites. Skip the meat and add shelled edamame for extra protein. You just need to boil noodles and mix a dressing—buy packaged slaw mix and you don’t even need to chop veggies. I do double dressing to make it more of a noodle dish than a salad.

Trader Joe’s steamed lentils, warmed with the fresh bruschetta sauce, sprinkle feta on top.

Veggie fried rice, can add eggs or edamame or whatever you like.
