After cinnamon, nutmeg, and pumpkin pie spice, I like cardamom in coffee.

| When you're making a pot of flavored/spiced coffee, a key ingredient, after putting the ground coffee and spices (cinnamon, nutmeg, etc.) in the basket is to add salt on top. The spice flavor will be much more evident in the coffee. |

| I add salt to my (plain) coffee grounds before brewing, too. It takes away the bitterness and makes it smoother. |

| Coffee is really good with molasses instead of sugar. It gives it a gingerbread kind of feel, which you could probably accentuate with some ginger and cinnamon. |

I melt good quality dark chocolate in hot coffee, with milk. It's not a (habitually disgusting) mocha, where coffee shops put cheap cocoa powder in a latte. What makes the difference is the quality of the chocolate. |
