Crockpot meals

I have never been a big crockpot user. However, we have a crazy schedule this fall and having a crockpot meal or two a week would be very helpful.

Anyone have a favorite crockpot recipe to share?

My favorite recipe is this black bean soup. You can change it up by adding rice or tortilla chips, cheese or avocado.

I’ve changed up the vegetables somewhat to our taste.

I feel like crockpots make slop, so am not a big fan. I do like them for soups though.

The only thing I make in the slow cooker is corned beef a couple of times a year.

My fav is chicken taco mean or pulled pork (no specific recipe; for chicken I just dump in chicken thighs, salsa, and taco seasoning). I’m disappointed by most “meals”

I make Indian food - daal makhani, rajma, cholley, saag paneer, saag lamb, carrot halva and kheer comes out great.

Pork chops or pork roast and cream of mushroom soup, either Pacific or Campbell's. Tender fall-apart pork and excellent gravy for potatoes or egg noodles.

We usually use it for chili, beef roast, or soup. I’ve also done bbq baby back ribs which are easy.

What I call chicken stew. Put about 2 pounds chicken breast (or thighs ), a couple carrots, a sliced onion, one cut up potato, one cut up sweet potato, in crock pot. Add a dash of olive oils, some salt, pepper, garlic, and paprika. Add 1 to 2 cups chicken broth. Cook on low around 7 hours. You want the chicken to be surrounded by the broth to not dry out.

I like this chicken chili recipe although I add frozen corn and frozen chopped spinach.

NP. This sounded so good I found an online recipe and cooked it last night for dinner. Pork chops, garlic, and cream of mushroom soup. I added a little water but the chops released a lot of liquid also. It was delicious.
