Trying to simplify meal planning for this school year and try to make some things ahead and freeze. I’d like do themed nights to take some of the decision fatigue out of it for me. Taco tues for example. What are some other broad categories that have a lot of options within the theme?
Taco Tues: fish tacos, black bean tacos, ground beef, sheet pan fajitas, quesadillas etc. I know meatless monday but I am Stumped for other suggestions. We do pizza or fish fry on Fridays (FF during lent months) Thanks! |

Not exactly what you asked for but one thing I do for the decision fatigue is to check the list of "National food days" each month. It gives me a reason to pick something.
Sept-May we also do soup once a week. That is based on the weather report. The rainiest day in the forecast is soup day. The busiest day is a crock pot meal. I guess in a way that is a theme. |

Meatless Mondays. Regular for us: stuffed shells, and red beans and rice (there is a phenomenal vegetarian bean recipe in a Moosewood cookbook called Skinny Tuesday red beans).
Friday is pizza night. |

I like to do “clean out the fridge/pantry day” where we eat whatever miscellaneous leftovers we have. I pull out everything that needs to be eaten and create a buffet. If there’s not a enough or large enough portions, I’ll supplement with a salad, crudité or charcuterie board.

| We never do breakfast for dinner but may do it once a month or so this year. We just don't eat those foods for breakfast either so I don't have the ingredients on hand! |
Just a small nit pick but that's more like Latino night since you are expanding it with fajitas a quesadillas. Maybe you can also do Italian Night, Meatless Monday, Left over Thurdsays. |

We do sandwich night, which can be anything from meatball subs to grilled cheese to steak sandwiches, sloppy joes, or on and j (and when my son was in middle school, he loved to have hot dogs n sandwich night and debate whether they should qualify).
Also do breakfast for dinner, which could be eggs, bacon, etc, or waffles and fruit, or cereal, etc. |
