All you taco bar lovers! Help!

I am planning a fish taco bar for an upcoming family event, and am unsure what I should serve.

We have a few vegans, plus some low carb people, and some picky kids, and nut allergies, and some elderly people who need easy textures. These are all people I know, and I happen to know that everyone who isn't vegan will eat either some kind of sea, or a cheese quesadilla.

I want to do three fillings:

Grilled shrimp

Breaded fish

What else would you have on the side?

I am thinking tortillas, shells, and lettuce for people who don't eat carbs

Shredded cabbage

Guacamole

Crema

Maybe Mexican street corn (and plain corn for picky children)

Fruit

Would you do rice and beans? Anyone have a good rice and beans recipe that would go well with fish?

Yes would definitely add rice and beans.

Salsa, cheese, tomato, lime wedges.

I love this rice recipe and make it all the time. I always sub veg broth so it is vegan. I top it with quest fresco, which you could have on the side to keep it vegan.

Like I said, it's family, and so I know them. The only people who don't eat fish are the vegans, who will like the ceviche taco thing, and the kids under 10 who like cheese quesadillas.

Yes rice and beans. As a vegetarian this sounds good! I might save this chickpea filling recipe to use this week. Maybe some more veggie toppings like tomato or a side of grilled veggies.

The rice and beans we usually make at home are charros beans. I am not sure if they go with ceviche and shrimp.

Should I do black beans and rice? Two kinda beans? Charros with bacon, and something else vegan?

You know your family members best, but I would do refried beans because it would be the best taste and texture for both old folks and kids.

This sounds great, OP. Good job accommodating everybody.

I might add salsa or pico for the non-guac folks, but otherwise this sounds great. I suspect most will only pick at rice and beans, but you could add if you have time. Another option is something like a black bean salad or bean dip, possibly pre-made. You could also simply put out crudite for people to have with guac and sour cream. (You can tell I’m a KISS hostess, lol)

You’re making pico, right? And cilantro? Pickled onion?

You could do a jicama slaw but it will be pretty similar to shredded cabbage.

Yeah, and we'll have both cojita and shredded cheddar.

I make a really good mango black bean salsa. If I made that and the Mexican rice above, would that work?
