Ratatouille

Does anyone know the way to make delicious ratatouille? I’ve tried a few times and it’s fine but not great. Any experts out there?

Roast the non-onion/garlic vegetables in the oven before you add them into the stew. It make a huge difference and keeps it from being too watery.

Use good quality canned tomatoes instead of raw tomatoes.

I'm making some this evening and did not think to use canned tomatoes. I normally use fresh from my garden, but having a bad tomato year so I bought some instead. Maybe I'll get some canned tomatoes just to be on the safe side. Did you have a brand you recommend? Love the idea about roasting the veggies.

DP: San Marzano only.

I like to use a mandolin to get the veggies thin. Layer them like in the movie. It is beautiful! I Also like to add a little cheese to the sauce for depth of flavor.

We make this one and it’s delicious. You need a mandolin slicer.
