| Roast the non-onion/garlic vegetables in the oven before you add them into the stew. It make a huge difference and keeps it from being too watery. |

I'm making some this evening and did not think to use canned tomatoes. I normally use fresh from my garden, but having a bad tomato year so I bought some instead. Maybe I'll get some canned tomatoes just to be on the safe side. Did you have a brand you recommend? Love the idea about roasting the veggies. |
DP: San Marzano only. I like to use a mandolin to get the veggies thin. Layer them like in the movie. It is beautiful! I Also like to add a little cheese to the sauce for depth of flavor. |
