What does "ding" mean in the context of a chinese restaurant?

I'm reading the menu of a restaurant and it says things like "shrimp cashew ding". What does that mean?

It refers to the slicing or dicing of the ingredients. Like if it's shrimp in your case, it would mean it's not whole shelled shrimp but shrimp that has been cut up. (Often referred to chicken stir fry dishes - it's not an entire breast or thigh but slivers of breast/thigh.)
