We are having a neighbor over on a Wednesday evening. Any quick and delicious weeknight dinner party menu ideas?

Assemble it the night before, then just bake it right before dinner. Or if you don't have time, assemble 2 days before, cook the night before, then reheat or serve at room temp.

I’d grill - marinate the chicken during the day, when you get home from work pop some cheese and crackers on a plate and pour some chilled white wine, take it outside to chat while you grill the chicken and some corn on the cob. You could serve on the side a store bought potato salad or pre-make a pasta salad.

We grilled Trader Joe’s pesto breasts tonight which took less than 10 min because the breasts are thin. Sliced up and served with pitas, crumbled feta, hummus, sliced cucumbers, red onions and tomatoes, shredded romaine, pita chips. This was an easy weeknight meal.

This is grilling until Labor Day. Sounds like a job for burgers, salad and corn on the cob.
