Pesto chicken meal w/out pasta?

I have a package of Trader Joe's pesto chicken breast that I want to cook tonight but I don't want to serve it with pasta/rice/bread. It is just for me and DH, so no picky kid eaters.
I was thinking of just tossing it with some romaine and parm cheese. Any other ideas? |
