Cauliflower/cauliflower rice q

So I love raw cauliflower and roasted cauliflower but the idea of cauliflower rice turns me off.

What's my problem? It's obviously a healthy alternative to regular rice or pasta but I can't bring myself to try it. Anyone else?

Also, how do people typically prepare cauliflower rice--does it get sauteed?

Get the frozen stuff from the grocery store. Start by mixing some into rice as a starting point. Then later you can try it on its own. You can microwave it easily or stir fry it or stir it into soups. It's $3 for a bag, don't be afraid to experiment!

I"ve tried cauliflower rice a few times and I just can't get into it. I don't like the texture.

I make cauliflower fried rice, and it's delicious - my kids don't even know it's not real rice. I also put the keto eggroll in a bowl recipe over cauliflower rice, plus anything else my spouse and kids eat with real rice (and they have real rice with everything except the cauliflower fried rice)

I like cauliflower rice that is made with fresh cauliflower, but I find the frozen one too mushy. I saute it.

I also just put things over cauliflower. Like I will make beef stew without potatoes and then just serve it on steamed cauliflower. I don't mash it or anything. Just cut it into florets.

I don't use it as a substitute for regular rice but for potatoes like in clam chowders. Mostly I use it to substitute for mashed potatoes. Here's my recipe:
1 bag frozen cauliflower rice
1 Tbl. butter
2 Tbl. sour cream
2 Tbl. cream cheese
Salt and pepper
Fresh chives (optional)
Cook cauliflower on medium in 1 Tbl butter for 10 minutes or longer to get all the excess water out. Puree in food processor with the rest of the ingredients except chives until smooth. Add chives.

Put an egg in there. Like fried “rice”.

I mix it with regular rice. Plain cauliflower rice is nothing like real rice to me. It is cauliflower.

I use the frozen stuff and stir fry it until it's a little golden. Then I add diced vegetables (frozen works as long as you thaw it first), egg, and a little tamari sauce and cook it until it's pretty well caramelized. I don't know that I think it tastes like fried rice but it's really good and an easy dish that my kids actually eat.

We always mix cauliflower rice and regular rice. It's the best of both worlds and is delicious.
