What sort of oil/fat is used in most Chinese, Indian and Thai takeaway?

Is it canola or other seed oils? Ghee? For vegetables, curries, noodles, fried rice, etc? I’m thinking of moderate restaurants that do a lot of takeaway.

The cheapest. No Indian restaurant is cooking in ghee.

I assume it’s the same for the falafel and cauliflower at Yellow, the quiche at Maman, etc. I’m trying to avoid seed oils and wondering what kind of cafe or takeout food works

Traditionally mustard oil for Indian food, but since you can’t sell it for food in the US I’m guessing it’s all canola for takeout.

It’s definitely not ghee anywhere in the US I’ve eaten, I’d know by the smell/taste.

Bengali food is well known for using mustard ,its certainly not used all over India.

I feel as though if you're picky enough about health things to avoid seed oils, you shouldn't be eating takeout food.
