Food truck rec: Big crowd/fast service

Does anyone have any recs for a food truck (or type of food) that has fast service for a large crowd. Crowd may be around 300 or so. Last year we hired a truck but people were waiting a long time per order and folks ended up spending the majority of time in line. This would be for families (many Hispanic families if that matters).

I went to one event where people preordered and had a set pick up time. People could still order day off but it helped the truck plan and things went smooother.

This. Or you might as well just get a caterer because a food truck would have to plan and prep at that scale the same way a caterer would.

Just do the math. If the food truck is there for 2 hours, you want them serving 150 people an hour, or 2.5 people per minute.

Thanks for the advice on catering everyone else. We had thought about catering but it seems awkward because it is self pay. I was thinking of the trucks at the county fair that seem to be able dish out food quickly.

There is more than one food truck at the county fair.
