My super easy/fast/good dinner tonight

Just thought I would share

1 package trader joe's garlic naan bread
1 tomato
1/2 cucumber
chicken breast from chicken I roasted over the weekend
1 cup sour cream or plain yogurt with juice of 1 lemon, salt, pepper and some ground cumin

I thinly sliced tomato, cucumber and chicken. Put the oven on broil and put the naan on a cookie sheet on middle rack flip after 2-3 minutes total time in oven about 5 minutes, I put on broil so it would heat the bread but not heat up the whole house with the oven on 350 for 20 minutes. Once bread is hot fill with all ingredients and fold. Super easy and really good!

I took a frozen pie crust and prebaked it, then filled it with

-sauteed onions, mushrooms and thawed frozen spinach (drained of liquid)

added 7 eggs and about 1 C grated cheddar and some other cheeses I had on hand.

to make a delicious spinach quiche

Sauteed onion, can of beans, frozen corn and cut up squash with TJs marinara sauce and layered between sauce, tortillas and cheese - enchiladas! (of sorts)

TJs makes a GREAT enchilada sauce. Get a bottle and try that next time. Yum!
