where to go for a solo work-cation in July?

I have 2-3 weeks in July for solo travel this year. I'm planning to take 1 week as true PTO and spend the rest of the time working remotely from some nicer location than DC in July (my company allows us to work from almost anywhere in the world for up to 30 days). Looking for somewhere that's on the cheaper side, has nice weather/low humidity and where I can spend the evenings after logging off taking nice little strolls and enjoying good food/wine. Last year I joined some family members at a beach town in Estonia, and that fit the bill except that it was very remote and took a lot of time to get into/out of. I get the sense that that may have to be the tradeoff I make for cheaper hotels though. Other suggestions very appreciated!

Eastern time +/- 6 hours is probably the limit, so that rules out eg SE Asia. Pretty much all of Europe and S America would be OK though!
