I’m looking for inspiration. Bonus points if it can be made ahead or prepped ahead. Extra bonus points if it is kid-friendly (my kids are good eaters but I don’t think they would like anything hot-spicy).

Indian food is great for make ahead, you can adjust heat levels to personal taste. Think saag paneer/ butter paneer, chana/ rajma masala, dal & rice, aloo gobhi, etc.
Other options - lentil taco filling, beans and rice, sheet pan chow mein (not exactly make ahead but can be prepped ahead) Grain bowls - you can have cooked grains, roasted veggies, sauces and dressings prepped ahead. |

I second the Indian vegetarian options. My kids also love bhindi-pyaaz fry (okra-onion vegetable), Kathal kofta (Jackfruit kofta curry) etc. And they keep well too.
Easy to make? Cucumber raita, Baigan chokha/bharta (Roasted eggplant mash), steamed lotus root salad, tomato soup, stuffed parantha, potato and tomato curry, pakodas and kadhi (yogurt and chickpea flour curry). |

Thai pumpkin curry in red or panang curry. Tastes even better the next day. Serve with white rice.
Thai eggplant in garlic sauce. Drunken noodles. Pad Thai. They all keep well. Substituted fried tofu for meat. |
