(1) Best beef stroganoff recipe and (2) best mushroom recipe?

I’m looking for a great beef stroganoff recipe. I’m also looking for recipes where mushrooms are a prominent or even the primary ingredient. I’ve made wild mushroom tart a million times, so I’m looking for new ideas. Any recommendations to share for either category?

I like this one from NYT:

This is another good mushroom recipe:

And I love a mushroom & spinach quiche.

I used to make a Hunter's Chicken that was full of mushrooms in a tomato-y sauce. It's also called Chicken Chasseur, although that version usually has cream and isn't as tomato-y.

This mushroom side dish is really good. We have it on Thanksgiving. https://www.closetcooking.com/roasted-mushrooms-in-browned-butter/

The spicy mushroom lasagna from Ottolenghi's book Flavor is very good.
Thomas Keller's Mushroom Quiche.

I air fry them with loads of rosemary garlic and pepper (olive oil). Partway through toss them with white wine and Dijon. Keep roasting til shriveled and dark. Use over everything as condiment.

It’s prob too simple and low brow but really love.
