I've made dressing many times before, and they didn't solidify in the fridge. This one was just white balsamic, dijon and EVOO. I assume the EVOO was the culprit. although it was the same brand I've bought many times before that didn't turn to sludge.
Do you keep homemade dressings at room temp? Or take them out of the fridge awhile before serving? |
| Just take it out of the fridge. It'll be fine. |
+1. It happens sometimes, no big deal, just take it out in advance. I do that anyway even if not solidified because I don't like putting cold dressing on salad. |
| It’s because it doesn’t have stabilizers and emulsifiers added like store bought ones. Just leave it out for a few minutes, shake to re-emulsify, and use. |
And if you are in a hurry, you cat float the dressing container in a bowl of hot water for a few minutes to hasten the thaw. |

This happens every single time I make dressing so I am surprised you are surprised.
Like PPs said, it’s totally fine. I usually just take my jar out when I start dinner prep so it’s ready when I am ready to dress the salad. NBD. |
| My salad dressings are amazing and people ask me for the recipes all the time, and they are dirt cheap. They solidify in the fridge, I put them in the microwave for 10 seconds then shake them up. |
| Microwave for 30 seconds if you want to use it right away. Otherwise put it out in advance n |
| I don't keep homemade dressing in the refrigerator. Typically, I make enough dressing for a couple of salads. |
I never thought about this before but that’s a good point. We don’t keep olive oil or vinegar in the refrigerator, we do we put homemade salad dressing in there? It doesn’t have anything perishable in it. |
| You didn’t realize that olive oil-based dressings solidify in the fridge??? |
If you are chopping up garlic, shallots, fresh herbs and putting it in there or using fresh lemon juice, then I wouldn’t keep it at room temp for days. If it is just oil, vinegar, dried herbs then it is probably ok. |
| This is normal!! |
Can you share any of them here? Sounds amazing. |
Be careful with this, if you re-use one of those plastic salad dressing squeeze bottles - especially if you have a high powered microwave oven - they can easily deform the bottles due to melting. I've changed to 15 microwave second bursts with a few seconds between, to keep those bottles intact. |
