Vegetarian/vegan recipes that are allergy friendly

We are hosting some friends for dinner this weekend. They are both vegetarians, but one cannot have eggs or tree nuts (or anything possibly cross-contaminated with tree nuts). I am also on a restricted diet due to health issues, and am avoiding gluten and dairy.

I’m struggling to think of ideas! So far I only have:
- Veggie lasagna or baked ziti — use a GF pasta and make myself a portion without cheese, plus salad
- Black bean burgers with roasted potatoes/veggies, plus salad

Please share ideas if you have them! I’m a pretty adventurous cook, but don’t want to try anything very intricate with this short notice.

If you do this, then use tamari instead of soy sauce to avoid gluten.

Black bean chili, beans and rice, cauliflower tacos, channa masala or dal. So many good options.

Indian food offers many options. Chana masala, vegetable korma, aloo gobhi, rice on the side.
Or you could do veggie fajitas, but with corn tortillas. Roasted veg, beans, guacamole, salsa, cheese & sour cream for those eating dairy.
Stir fry with tofu, vegetables, rice on the side. Make sure you use gluten-free soy sauce.

I’d do tacos with guacamole, seasoned black beans, peppers and onions, sweet potatoes and chipotle mushrooms.
