I only ever make a single serving at a time, the apparently standard proportions - 2 T chia seeds, 1/2 c liquid. I use Trader Joe’s whole milk chocolate milk and then I don’t need to add any sweetener or vanilla or anything.
The key is combine them and stir, wait ten minutes, then stir again and refrigerate overnight. Otherwise I end up getting little hard clumps. |

I make this one and it sets:
Blackberry chia seed pudding 1 cup unsweetened full fat coconut milk 1 tsp vanilla 1/2 cup blackberries 1/4 cup chia seeds In a blender, puree coconut milk and vanilla until it starts to thicken (about a minute). Add blackberries and puree another minute. Fold in chia seeds with a spatula. Let set overnight. |

| I usually use about 3 T. Chia seeds to about 1 cup of liquid. I’ve used different types of dairy and non-dairy milk, including egg nog. Sometimes I add oatmeal. There’s no secret. I usually mix the ingredients together in the evening and refrigerate the mixture. Stir the mixture a couple of times before I go to bed, and again in the morning. It’s always been fine. |

I use this one, with whatever milk or even vanilla protein shake I have around. The key is to let it sit at room temp for 10-15 before putting in the fridge.
