We made burrito bowls last week. There was a ton of leftover arroz rojo, chicken, black beans, corn, and grilled onions and green peppers. I froze all of it. I’d like to create something with it this week. I’m thinking burritos assembled and baked like enchiladas in a casserole dish? Would you use green sauce or red?

| I was also going to suggest tortilla soup. I think burritos with green sauce would be good. I’d probably do an omelet or frittata, with tortilla chips and sauces on the side, or a salad, but it sounds like you’d prefer something more substantial. |

I like your original idea of an enchilada-Esque dish, OP. If it were me I’d go green sauce, but I feel that’s entirely personal
Preference. Could work in some sour cream and make “enchiladas” suiza. Or shred some cotija down over the top. |
