I have 1-2 nights per week that need something made ahead and reheated super-fast or warmed in the oven for an hour.
My go-tos are: Lasagna / baked ziti Chicken enchiladas or chilaquiles Chili Really any kind of soup, but needs to be hearty for my teen athletes. Sausage/lentil, beef stew, chicken noodle (heavy on the chicken). Always have a bag of sliced veggies and a loaf of bread to pull out with it. Shepherd’s pie / cottage pie Fish or shrimp also cook up really fast in a skillet. If I have sides pre-made and ready to go, I can cook the seafood in 5-10 minutes. For example last week I made cornbread and coleslaw the night before, then cooked salmon fillets really fast. |
