Make ahead dinners

What are some of your favorite make ahead meals? Either batch prepped or meals that can be made in the morning/afternoon, and served for dinner. Thanks

I make big batches of meatballs every other month. Usually 8 meals worth of Italian and 5 meals worth of sheepish. Then freeze them on a tray, then bag in ziplocs.

What are sheepish meatballs?

Chicken cutlets (make in batches and freeze)
Chicken parmigiana
Meatballs (make in batches and freeze)
Baked spaghetti
Baked ziti (serve half/freeze half)

I have 1-2 nights per week that need something made ahead and reheated super-fast or warmed in the oven for an hour.

My go-tos are:
Lasagna / baked ziti
Chicken enchiladas or chilaquiles
Chili
Really any kind of soup, but needs to be hearty for my teen athletes. Sausage/lentil, beef stew, chicken noodle (heavy on the chicken). Always have a bag of sliced veggies and a loaf of bread to pull out with it.
Shepherd’s pie / cottage pie

Fish or shrimp also cook up really fast in a skillet. If I have sides pre-made and ready to go, I can cook the seafood in 5-10 minutes. For example last week I made cornbread and coleslaw the night before, then cooked salmon fillets really fast.
