This is crazy delicious, the marinade for the chicken is so incredible and combined with the crisp salad, seasoned rice, and yogurt dressing -- my mouth is watering just thinking about it. Might have to make this next week just because I've thought about it now:

I love these French onion chicken thighs, and the mashed potato recipe is pretty good too. I'd never thought to boil the garlic with the potatoes before.

Marinate the chicken using the following mixture:
6 cloves garlic, peeled 1/2 yellow onion, roughly chopped 1/2 cup loosely packed cilantro 1-2 jalapenos, deveined and seeded 2 tablespoons fresh oregano or 2 teaspoons dried oregano 2 teaspoons ground cumin 1 1/4 teaspoon salt 1 teaspoon pepper 1/2 cup fresh orange juice 1 tablespoon orange zest 1/4 cup lemon juice 1/4 cup lime juice 1/3 cup extra virgin olive oil Process garlic, onion, cilantro, jalapenos, and fresh oregano in food processor. Pour into a bowl and add all remaining ingredients. Use to marinate your favorite protein, then grill, broil, or saute. |
