What’s your dinner plan this week?

I’m in a rut and would love inspiration. Here’s what we’ve been doing for the winter:

Pasta alla gricia w salad
Turkey lettuce wraps with basmati rice
Kale and white bean soup
Baked ziti
Shrimp tacos

Yesterday - new york strip steak and potatoes

Today - lamb chops on grill and Israeli cous cous

Monday - skirt steak with pasta

Tuesday - Something with paneer in it.

Wednesday - thin sliced chicken breaded and sautéed till crisp with a side

Thursday - Chicken breast in crock pot on low. Shreds well. Might mix in with white rice and black eyed peas. Could cook rice in half coconut milk, or in chicken broth.

Friday - carryout

Honestly I love to cook but this time of year I am just not into it.

Tonight we had pasta with zucchini sauce (cooked forever with butter, olive oil, garlic, lemon, and basil), roasted red peppers and tomatoes, and baked lemon chicken.

Tomorrow I have a nerve-wracking doctors appointment so we are ordering my takeout choice.

Tuesday will likely be tacos or fajitas.

Wednesday and Thursday we have school events so we will either pick something up or grab simple stuff at home (ramen, pasta, etc...).

Friday is too far away.

This is not my best work!

I need to eat salads for lunch and sauté some mushrooms and freeze them for later, because there is no way I will use them this week.

I made a batch of barley and kielbasa soup (was planning on beef but the stew beef prices were outrageous)

-pasta and meatballs
-baked bread tofu with couscous

Not sure what else.

Yesterday- turkey veggie chili with cornbread muffins
Tobight- brown sugar paprika chicken thighs rice and green beans
Tomorrow - spaghetti with beef and spinach sauce. I'll mix pasta and broccoli as the base for the sauce
Tuesday- pulled pork tacos with pineapple radish salsa and cojita cheese with a simple arugula salad
Wednesday- Belgian waffles eggs bacon fruit
Thursday- leftovers or salmon/fish sticks (depends on whether there are leftovers)
Friday- eat out
Saturday- family event
Sunday- chuck roast beef shredded sandwiches with horseradish mayo on ciabatta

Next week

Putting in a plug for the pot roast I made on Saturday. To die for. Company Pot Roast by Ina Garten is the recipe. OMG was it good.

Monday chicken parm from TJs with frozen veggies.
Tuesday our Olive Garden leftovers ( from tonight)
Weds cheese tortellini in pesto sauce with broccoli
Thurs going out to Tex mex with friends.
Friday black bean/cheese quesadillas with avacado and tomato

I don’t enjoy cooking btw so our meals are pretty basic

We don’t eat much meat, here’s our plan for this week. 2 adults and a toddler.

Sunday - roasted bone in/skin on chicken breast, roasted carrots and potatoes, side salad
Monday - roasted butternut squash and tofu with a ginger glaze, brown rice
Tuesday - frittata with caramelized shallots, gruyere, and spinach
Wednesday - turkey chili (topped with avocado, cheddar, scallions) with cornbread
Thursday - brown lentil dal, basmati rice, sautéed kale
Friday - takeout

Friday - event, probably eat there or pick up takeout on the way home

We have a lot going on this week so it's gonna be tough. Here's what I'm thinking:

Leftovers Monday - dinner has to be early and quick
Butter chicken with either sweet peppers or roasted broccoli
Toast, scrambled eggs, fruit, and spinach smoothies

I'm thinking of a soup or stew Thursday with what we have on hand but haven't settled on a recipe. Maybe something heavier with andouille sausage, beans, tomatoes, celery, carrots, and possibly collards, or maybe more of a smooth vegetable soup.

Fridays we usually let the kids have chicken nuggets as an end of week treat since we rarely get takeout or eat out. Adults will probably have leftover butter chicken.

Tonight did spinach lasagna rolls

All meals are vegetarianized

We will go out for dinner one night due to extracurricular schedule
