Just made roasted Brussels sprouts with grapes. I liked it!

My favorite is roasting broccoli with a little bit of evoo, salt and pepper and then adding some pine nuts and parmesan once it is browning. Then pull out and toss with a splash of lemon juice. So good!

I don't know how to make it myself but I love the riced cauliflower stir fry from Trader Joe's.

Also a big fan of oven roasted broccoli with olive oil, garlic and bread crumbs and roasted carrots with pesto.

Asparagus wrapped with a piece of a semi-hard cheese in prosciutto then roasted is excellent

I do this but add white beans and a bit of bacon bits instead of pine nuts
