Can anyone recommend healthy (not cream based) recipes? I would really appreciate it! I’ve lost 75 pounds on WW but I’m at a plateau, and would love some help with soup recipes. Only 25 more to go until my goal, and I’m hoping soup will help me get there.
Thank you so much!! |

Do a search for the Cabbage Soup Diet. I’m not recommending the diet, but the soup recipes are healthy and not cream based. (Be careful about the sodium content though.)
I like chicken broth with veggies — especially celery and zucchini— garlic, ginger, mushrooms, cilantro, coriander seeds, and shrimp or chicken. Congratulations on your significant accomplishments! |
| My favorite soup is so easy (and filling and not unhealthy)! Brown ground chicken (I like the ground breasts) or turkey. Add at least one bottle of Herdez green salsa and tons of beans - dark and light kidney beans, red beans, whatever. Add chicken stock until you’re happy with the consistency. And that’s all! |

I'm always amazed at how creamy this soup tastes without a cream base. I don't usually use as much oil as it calls for.
Seared Broccoli and Potato soup ½ cup olive oil, plus more as needed 2 heads broccoli (about 2 pounds), separated into small florets, stems peeled and diced 2½ teaspoons kosher salt, more to taste 2 tablespoons unsalted butter 1 large Spanish onion, diced 5 cloves garlic, chopped ½ teaspoons black pepper, more for finishing ¼ teaspoon red pepper flakes ½ pound potatoes, peeled and thinly sliced ¼ teaspoon finely grated lemon zest 1½ tablespoons fresh lemon juice, more to taste Grated Parmesan, to finish Flaky sea salt, to finish Step 1 In a large soup pot, heat 2 tablespoons of oil over high heat. Add about a third of the broccoli, just enough so that it covers the bottom of the pan in a single layer without overcrowding. Cook broccoli without moving it for about 3 to 4 minutes, or until dark brown on 1 side only (leave the other side bright green). Transfer to a big bowl and repeat with remaining broccoli and more oil. When all the broccoli has been browned, season with 1 teaspoon salt and set aside. Step 2 Reduce heat to medium-low. Add butter and remaining 2 tablespoons of oil to pan. Add onions and garlic, black and red peppers, and ½ teaspoon salt. Cook onion-garlic mixture until soft and translucent, about 4 minutes. Add potato to the pot with 1 quart water and remaining 1 teaspoon salt. Bring to a simmer, cover pot and cook until potato is just tender, 10 to 15 minutes. Add broccoli, cover again and cook until tender, another 5 to 10 minutes. Step 3 Add lemon zest and roughly purée soup with an immersion or regular blender, leaving some small chunks for texture. Stir in lemon juice. Finish with grated Parmesan, a drizzle of olive oil, black pepper and flaky sea salt. |

Do you like lentil soup? Here is a simple recipe.
Ingredients: 1 of each onion, red potato, carrot, (green pepper if you like them, I usually skip), tomato, 2 cups red lentils. Wash and soak for a few minutes the lentils. Dice onion & pepper, shred potato & carrot and tomato, fry onion and pepper in good amount of olive oil till the onions are golden and wilted. Add shredded potato, carrot, tomato and washed lentils. Add bay leaf. Add 6-7 cups of boiling water. Bring bag to boil and let simmer for 30-40 minutes. Add salt, pepper, spices ( cumin). You could add a squeeze of to taste. |

Ina Garten’s Italian Wedding Soup. This is my most favorite soup in the world! It takes a bit of time to make, but you will have it for days. Make your own chicken broth or don’t even bother otherwise.

| Minestrone, Ina Garten’s lentil soup, oh she glows red lentil soup, and roasted carrot soup. |
First, great job op! I am also working on weight loss and I have been making recipes from skinny taste website. I made a soup last week that was chickpea and escarole. It was pretty good, but I tweaked the recipe a bit to make it how my family would like it. Anyways, skinny taste has some great recipes. |
