Looking for a good recipe to recreate a mushroom dish

I had a dish many years back and it was basically a flat sheet of pasta folded into a dish. On top of it was a mushroom sauce or gravy. It was not alfredo sauce. Had onions or leeks in it. It was thick and savory.

I wrote down the dish name at the time and a description of what was in it but I must have misplaced that. Wanted to see if anyone recognizes this dish. Or if anyone can recommend a mushroom sauce/gravy to go on the pasta.

Key is to get the right mushrooms. Shiitake are my favorite but they are often pricy so I will sometimes do half shiitake, half crimini.

I like it a bucatini but you could also do it with a pappardelle which s probably what that flat, sheet-style pasta you had was. Pappardelle is one of the easiest pastas to make at home if you have a pasta press (or attachment for a stand mixer) because it doesn't require a special extruder and you can just freehand cut the sheets. You can also buy it fresh at an Italian store or even Whole Foods. Fresh pasta can make a difference for a dish like this.

Ohhhh, these all look delicious. May have to try them all.

The flat sheet was literally that, the size of an 8 x 11" sheet, draped in a bowl, and topped with the sauce and cheese. So, you had to cut up the sheet of pasta as you went. I had never seen that before.

I can make pasta and Pappardelle is a good option.
