Recipes for cheap and healthy meals?

I'm so sick of the food I usually make ... tortellini with pesto, spaghetti, hamburgers, blah blah blah. Any ideas for cheap meals???

Slow cooker/crock pot dishes - throw in a roast, celery, carrots, potatoes, your choice of spices, etc, cover with bouillon/water, cook at very low temp (200F?) for the whole day, and voila: dinner's ready when everyone comes home.

basically, for cheap and healthy, you want to minimize meat and increase veggies. don't cut out the fat because you need it for flavor. use bean, eggs, and soy as proteins.

-pasta with broccoli and chickpeas

-tofu stir fry

-frittata with veggies

-couscous with toasted almonds

-veggie fried rice or lo mein

- Black Bean Tacos (just heat up a can or two of black beans and add a few seasonings - cumin, onion powder, garlic, chili powder), serve with tortillas, salsa, cheese, and corn)

- Chicken tacos in crockpot (1.5 pounds chicken, 1 can of chopped tomatoes, 1 enevelope of taco seasoning), cook on low (I think the recipe is for 6 to 8 hours, but I've left it in there longer). - Stir and shred before serving.

- Stir fry - use frozen veggies if fresh aren't affordable. I like to use a little garlic, hoison sauce and Terriaki sauce. I used chicken, but try to get it on sale and freeze (pre-cut before freezing to make it super easy).

Lasagne.....I get no-bake noodles from Trader Joes and layer them with a mix of Part-Skim Ricotta/frozen spinach or steamed broccholi/1 egg/salt/pepper/garlic salt, parmesean, sauce and top with shredded mozzrella.

Couscous - we had it this week with chopped dried apricots and pecans (coated w Molasses). Served with a baked tomatoe and asparagus YUMMY!

Thai tofu: 1 can conocut milk, 1 T of curry paste, Simmer ~ 10 minutes. Add 2T brown sugar, cubed firm Tofu and veggie of choice (we usually go for brocchli). Simmer covered for 10 - 15 minutes. Serve over rice

Each of these dishes costs between $5 - $8 to serve a family of 4.

Saute onion and garlic. Add one can diced tomatoes, curry paste to taste, lentils, diced sweet potatoes and enough water to cover. Simmer until lentils and potatoes are tender. Serve with basmati rice or naan.
