Easy, delicious muffins

Anonymous

My friend group is getting together for brunch next Saturday and I’ve been assigned to bring muffins.

I’ve never baked a muffin and desperately need delicious, easy recipes.

Any suggestions?

Smitten Kitchen pumpkin bread. The recipe makes about 18 muffins. SUPER easy, one bowl, if you have a can of pumpkin you probably have everything you need already. Come out perfectly every time.

These are delicious. If you’re not into pumpkin in January, that side has tons of great muffin recipes.

I make this all the time as a loaf. Will definitely try as muffins.

I like the King Arthur morning glory muffin recipe and I think it's pretty forgiving if you don't bake a lot.

I love these lemon blueberry ones and they aren't hard to make.

Me too! These are my fav. While I wouldn’t call the hard, they are messy to make because of the apple and carrot grating. But
Worth it!

I like Stella Parks recipe for muffin mix from her book Bravetart. It’s easy and customizable to any add ins.
That said if you aren’t a baker why not just buy some delicious muffins?

These are nothing special. And too sugary sweet.

Trader Joe’s blueberry muffin mix. Really easy (just need a few extra but basic ingredients) and comes out delicious.
