Sodium is the only concern.

Flush out with water.

Can you make it at home with fewer noodles or a different type and low sodium broth?

That's your entire sodium content for the day. So it depends on the other meals.

Are you on medication

I’ve thought about replacing the noodles with riced broccoli or maybe barley or even brown rice noodles .

If you gonna have it, have it the right way

Drop down to once a week. Then every other week.

Why would it be bad? Compensate with other things you eat that day, and during the week, or find low sodium broth. Enjoy.

Lots of sodium and msg

Lots of simple processed carbs (rice noodles)

Pho can be low fat and low salt, but you need to dilute the takeout or make it at home. My Viet MIL makes delicious pho, but it’s really salty!

This is true. I do like Pho growing up and buy it from a restaurant a few times a year. Now that it is $13 a bowl, no longer appealing. To feed a family, easier to make it at home with a instant pot from scratch. Will get 10+ servings from it, with tons more meat. It takes about 10-15 minutes to set up and an hour of waiting time for cooking. This version will have no msg and is low sodium. The only sodium is from salt and a bit of fish sauce. No other sodium ingredients.

The meats to use are: Pork back, pork neck meat, both inexpensive

Bigger budget: Beef Ox Tail meat.

Or chicken.

Google the recipes.

Rice noodles can be replaced with alternatives such as bean-based noodles or brown rice noodles.

It isn't unhealthy to have pho twice a week.

It is unhealthy to have pho twice a week and all of your other meals are ALSO high sodium/low vegetable.
It is very healthy to have pho twice a week all of your other meals are low sodium/high veg.

It is all about balance. Look at your whole diet...
